Kuku Shirin

Kuku is a popular Persian dish. Kuku is a class of Persian cuisine, very similar to a French quiche: It consists of eggs mixed with a whole list of additives. In Iran, Kuku can be made with chicken, red meat, vegetables or potatoes. Kuku Shirin is a traditional vegetarian dish from Qazvin.

It contains mashed potatoes, eggs, flour, saffron, and salt. They mix these items, then make patties and fry them to a golden color. Then you need to make a sweet Sharbat to pour on top. You should mix Sugar, Rosewater, cardamom and saffron and stir the mix for a couple of minutes.

For the decorations you can use almond slices, pistachio slices or barberries. Kuku Shirin can be served with rice or flatbread and you can enjoy it alongside fresh vegetables or Persian yogurt.

Ingredient for Kuku:
3 Potatoes
6 Whole Eggs
1 Tbsp Flour
4 Tbsp Sugar
1 Tsp Saffron and Cardamom
Almond Slices for Decorations

Ingredient for Sharbat:
3 Cups of Sugar
1 Cup of Water
1 Cup of Rosewater
